I for one couldn’t find a more satisfying and tasty solution to the unbearable-I-swear-I’m-gonna-pass-out kind of hunger I experience on a daily basis at ’bout 10:30 am. Anybody with me here?
Unfortunately, I also get hungry around 4:00 pm and at $1.49 a pop this almost $20/week habit was beginning to get me into trouble. After a
horrible cry fest stern discussion with my husband (the economist,) about me needing to be more conscious about saving money, I decided I needed to either make my own or kick the habit.
So I made my own.
Next comes the dry roasted, 50% less salt cashews. <— a lot of recipes call for raw nuts, and that’s totally cool to use, BUT let me tell you something….. you should use these nuts. There’s something about these nuts. They’re not too salty yet have a perfect depth of flavor.
Use nice clean hands to crumble together the nuts and dates and push the mix into the corners of the dish.
This recipe is merely a starting off point for making TONS of different faux Larabars. Keep the lemon zest if you like it, take it out if you don’t. All you need are dates and nuts at a ratio of 1 cup dates to 1/4 cup nuts. Reduce the dates if you want to add other dried fruit. Seriously we’re talking endless possibilities here.

makes about 2 bar sizes
1 cup whole dates, pitted (softest work best)
1/4 cup Trader Joe’s dry roasted, 50% less salt whole cashews
1/2 – 1 tsp lemon zest
1. Pulse the dates in the food processor (be sure there are no pits!) If this turns into a big ball you can just using a sharp knife and finely chop.
2. Add the nuts and zest to the food processor, pulse until chopped like texture. Not too big, but not bread crumbs either.
3. In a plastic wrap lined dish thoroughly mix the dates with the nut mixture until combined.
4. Seal in plastic wrap and place in fridge for at least 20 minutes before cutting into desired shape. Keeps fresh in fridge for at least 2 weeks, but def won’t last that long!
